I’m not really a giant food guy .. Do what works best for you .. I find it stays juicier when fat is between the heat source and the meat .. but all smokers run a bit different .. I smoke on a offset so I am always fat up .. but have found on a green egg I have better success with fat down .. twitter.com/Baker_of_Chain…
