* Two jars have fermentation lids on them and the other has an inverted glass jar inside, holding a large cabbage leaf on top, so air can escape w/o exposing the kimchi. The fermentation lids are made for mason jars; a metal spiral pushes the veggies under the liquid line. 2/2
The vegan kimchi I made last week is fermenting very nicely. Can't wait to eat it! (I tried some today and it's already delicious but it'll be better if we wait a bit longer.) Napa cabbage, daikon radishes, carrots, red miso, chili pepper, sugar, salt, and garlic. 1/2

I'm college educated, inc. ECE and special education classes, and knowledgeable on a wide range of subjects. I know how to research, identify, & learn what I don't know. AND IT'S STILL VERY HARD TO HOMESCHOOL EFFECTIVELY. Too many homeschooled kids are getting a subpar education.
