It’s a Texas-raised Gyulais brisket (Wagyu/Charolais cross) gifted to me from @Chef_AustinS. Just under 10 lbs, and highly marbled. The processor trimmed it like this.

I tried just about everything, but the ribs weren’t done. Wade got them on too late this morning because the town is on high alert. A prisoner was being transported to Huntsville, but he commandeered the prison bus and escaped just up the road from here.
Stopped at WB Custom Cooking in Buffalo. Wade & Becky Brewer run the year old BBQ shack. Becky makes the excellent beans and cobbler. Wade smokes the meat and makes a great homemade BBQ sauce.
