Put the stuffed turkey on a rack, then coat with extra virgin olive oil, and a good amount of salt and pepper. It goes into the oven at 375 for an hour and a half. #tftestkitchen #Thanksgiving
Using the piping bag loaded with stuffing, carefully fill the breast pocket with a back and forth motion. You'll need to do a little smoothing out with your fingers when you're done. This is a very easy step. #tftestkitchen #Thanksgiving
Then gently separate the skin from the breast with your fingers. Be really careful here not to rip the skin. We're making a pocket for the sausage/sage stuffing. #tftestkitchen #Thanksgiving

Gently pulse the stuffing ingredients together. Then spoon the sausage/sage stuffing into a pipping bag. A plastic ziplock bags works just as well. Push the stuffing into one corner and snip the end off. #tftestkitchen #Thanksgiving

Stuffing ingredients. 1 pound pork sausage, 4 cups of sour dough bread (use cornbread for gluten free) cubed and toasted, 1 cup diced onion, 1 cup diced carrot, 1 cup diced celery, 5 cloves of garlic, one bunch fresh thyme, 1 bunch fresh sage, 1 egg and 2/3's cup of chicken stock.
